Often referred to as “living fossils,” sturgeons have retained many primitive characteristics that date back to the Early Jurassic period. These bottom-feeders are characterized by their heterocercal tail and barbels, which they use to locate food like crustaceans and small fish. Sturgeons vary greatly in size, with some species, like the Beluga sturgeon, reaching over 20 feet in length. Commonly found in temperate waters of the Northern Hemisphere, they are closely related to paddlefish and share the order Acipenseriformes with them. Sturgeons are renowned not only for their caviar, which is a highly prized delicacy, but also for their flesh, making them significant in both commercial fishing and aquaculture.
